Homemade XO sauce

Ingredients: 150 grams of dry beans, 100 grams of sausage, 50 grams of chili peppers, 50 grams of garlic, 500 grams of salad oil

Temperature: 1 bottle of pot bottom oil (70 grams), 1 tablespoon of edible oil

Preparation: Prepare 3 250ml jars, put them in the pot to kill bacteria with water, and dry them for use.

Practice:

1.  Scrubs, dry and water, and prepare.

3. Add 500 grams of salad oil to fry the pot. After the oil temperature rises slightly (low heat), add the crust first, stir-fry for 1 minute, then add dry garlic, garlic and chili in sequence and stir-fry. (The order of the ingredients can be determined by yourself, or you can add Jinhua ham)

4. Keep medium-low heat, stir-fry for 10 minutes, add 1 bottle of potassium oil and 1 tablespoon of leucorrhea.

5. Turn off the fire, put the roll, and put the jar.

6. Can be packed into 3 cans of 250 ml XO sauce.

Golden silver dried bean soup

Ingredients: 8 small dried beans, 1 box of chicken egg tofu, 1 green bean root

Method:

1. Press the steamed dried beans into pieces (or tear them into pieces).

2. Prepare soup pot, put 3 bowls of chicken soup, and hang it on top of it with a stainless steel filter spoon.

3. Cut the chicken egg tofu into slices and press the pressure with a spoon. The tofu will become fine pieces when it passes through the fine filter. However, a lot of tofu fines will be pasted on the back of the filter network and just scrape it off with a spoon.

4. Add the steamed dried bean juice and dried beans to the pot and cook slowly over low heat.

5. Add 1/4 teaspoon of salt, chicken powder, sesame oil (sauce or ginger oil is also possible, intended to adjust the color).

6. Add taibai powder and mix to increase the consistency of the soup, allowing the smooth tofu and chewy dry frites to be clearly drizzled on the chicken soup, making it look better.

7. Put it in a bowl and sprinkle some green flakes.

● Because the ingredients of tofu and dried beans are similar in color, I specially scoop a spoonful when taking photos to let the readers see clearly that there is dry beans in this way.

● This is a very beautiful way tofu. In most people's impression, Wensi tofu needs to be cut into thousands of fine pieces with fine knife skills, as if it was only done by experienced masters. In fact, just use a stainless steel filter spoon.

Dried bean sprouts

Ingredients: 8 small dried bean sprouts, 1 pack of yellow bean sprouts (about 150 grams)

Method:

1. Remove the head and tail of the yellow bean sprouts, and look like silver sprouts. Soak them in water and taste more crisp and refreshing.

2. Take out the steamed dried beans and tear them into pieces, and wipe dry with a napkin.

3. Put 1.5 tablespoons of oil in the fried pot and add dry beans. Because it is easy to spray oil, it is best to put the pot on it. After about 1 minute, the dry beans will turn golden yellow, and then put dry oil and serve.

4. Stir the remaining oil into the silver sprouts, add a little salt and chicken powder to taste, stir fry over high heat for about 1 minute, add the dry sprouts and stir-fry evenly. Or sprinkle dried vegetarian sprouts on the silver buds.
